Three ingredients - frozen peas, stock and a handful of fresh mint - blend into something that is a beautiful vibrant green, fresh tasting and genuinely delicious. It sounds too simple to be special but it absolutely is. The mint lifts the sweetness of the peas into something that tastes bright and alive in a way that is completely unique.
For those who need something light, nourishing and quick to prepare on warmer days this is the perfect soup. It can be served warm or at room temperature and is one of the most refreshing things in the collection.

Recipe Details
Serves: 4 Prep time: 2 minutes Cook time: 8 minutes Freeze: Up to 3 months
Ingredients
500g frozen peas (no need to thaw)
3 cups good quality vegetable or chicken stock
Small handful of fresh mint leaves (approximately 15–20 leaves)
Salt and white pepper to taste
Optional: 2 tbsp cream or crème fraîche to serve
Optional: 1 clove garlic, 1 tbsp butter
Method
Step 1 - Heat the stock Bring stock to a gentle boil in a medium saucepan. Add garlic and butter if using.
Step 2 - Add peas Add frozen peas directly to the boiling stock. Return to the boil and cook for just 3 minutes. Do not overcook - overcooked peas lose their beautiful green colour and fresh flavour.
Step 3 - Add mint Remove from heat and add fresh mint leaves.
Step 4 - Blend immediately Blend immediately while still hot using a stick blender until completely smooth. Blending while hot preserves the vibrant green colour beautifully.
Step 5 - Season and serve Season generously with salt and white pepper. Add a swirl of cream if desired. Serve immediately for the best colour and flavour.
Freezing Instructions
Cool quickly - this soup loses its colour slowly so freeze as soon as possible after cooling
Portion into containers
Label and freeze up to 3 months
To reheat: Thaw overnight. Reheat very gently over low heat - do not boil as boiling affects the colour and flavour. Add a fresh mint leaf to each bowl when serving to revive the fresh flavour.
Always ensure food is piping hot all the way through before serving.
Kim's Tips
💕 Don't overcook the peas - 3 minutes maximum. Overcooked peas turn grey-green and lose their fresh sweet flavour entirely.
💕 Blend immediately - hot blending gives the most vibrant green colour. The colour fades as the soup sits so serve quickly.
💕 Frozen peas are actually better than fresh - frozen peas are frozen at peak freshness and are sweeter and more consistent than fresh peas which can be starchy.
💕 White pepper keeps it looking beautiful - black pepper creates dark specks in the bright green soup. White pepper seasons it without affecting the colour.
💕 Serve with crusty soft bread - a small piece of soft bread alongside turns this into a complete light meal.
