This blender tomato soup uses just tinned tomatoes, stock and a little cream to produce something silky smooth, deeply flavoured and utterly satisfying. It's the kind of soup that tastes like it took hours โ and the secret is that it takes barely any time at all.
For elderly parents on days when appetite is low or you need something quick and nourishing, this soup is one of the most reliable things in the collection. Warm, smooth, easy to eat and naturally appealing even when nothing else sounds good.

Recipe Details
Serves: 4 Prep time: 2 minutes Cook time: 8 minutes Freeze: Up to 3 months
Ingredients
2 cans diced or crushed tomatoes (400g each) - the better the quality the better the soup
2 cups good quality vegetable or chicken stock
ยผ cup thickened cream
Salt and pepper to taste
Pinch of sugar
Optional: 1 clove garlic, 1 tbsp olive oil, fresh basil to serve
Method
Step 1 - Combine and simmer Pour tomatoes and stock into a saucepan. Add garlic if using. Bring to a simmer over medium heat and cook for 5 minutes.
Step 2 - Blend Use a stick blender to blend until completely smooth. Or carefully transfer to a blender in batches.
Step 3 - Add cream and season Stir through cream. Season generously with salt, pepper and a pinch of sugar. Taste and adjust - the sugar balances the acidity of the tomatoes beautifully.
Step 4 - Serve Ladle into warm bowls. A swirl of cream and a fresh basil leaf on top is simple and beautiful. Serve with soft bread for dipping.
Freezing Instructions
Freeze without the cream for best results. Add cream when reheating.
Cool completely
Portion into containers
Label and freeze up to 3 months
To reheat: Thaw overnight. Reheat gently adding cream when warm. Never boil after adding cream.

๐ Quality tinned tomatoes make all the difference - in a recipe this simple the quality of your main ingredient matters enormously. Buy the best tinned tomatoes you can find.
๐ The sugar is important - a pinch of sugar balances the natural acidity of tinned tomatoes and makes the soup taste rounder and more mellow.
๐ Add a parmesan rind - if you have a parmesan rind in the freezer add it to the soup while it simmers. It adds incredible depth of flavour. Remove before blending.
