Sometimes the simplest recipes are the most perfect ones - and baked cinnamon apples are a perfect example.

A whole apple filled with a little butter, honey and cinnamon and baked until completely tender. The apple becomes soft enough to eat with a spoon, the filling caramelises into the most gorgeous warm syrup and the whole kitchen smells like the best kind of autumn afternoon.

For elderly parents this is a wonderful dessert. Apples are naturally high in fibre and antioxidants, the gentle sweetness is satisfying without being overwhelming and the soft baked texture requires almost no effort to eat. Served warm with a spoonful of thick cream or a drizzle of custard it becomes something genuinely special.

Recipe Details

Ingredients

  • 4 medium apples (Pink Lady, Fuji or Granny Smith all work well)

  • 4 tsp honey or pure maple syrup

  • 4 tsp butter, cut into small pieces

  • 1 tsp ground cinnamon

  • ¼ tsp ground nutmeg

  • ¼ tsp ground ginger (optional)

  • 4 tbsp rolled oats or chopped soft walnuts (optional filling)

  • ¼ cup apple juice or water (for the baking dish)

Method

Step 1 - Preheat your oven Preheat your oven to 180°C (160°C fan forced).

Step 2 - Core the apples Using an apple corer or a sharp knife and small spoon, remove the core from each apple creating a cavity about 3cm wide. Be careful not to cut through the bottom of the apple - you want the filling to stay inside. Peel the top third of each apple if desired.

Step 3 - Fill the apples In a small bowl combine the honey, cinnamon, nutmeg and ginger. If using oats or walnuts add these now and mix together. Spoon the filling evenly into each apple cavity pressing it down gently. Top each with a small piece of butter.

Step 4 - Bake Place the filled apples in a baking dish just large enough to hold them snugly. Pour the apple juice or water into the bottom of the dish - this creates steam and prevents the apples from drying out. Bake for 35–40 minutes until the apples are completely tender when pierced with a knife. They should hold their shape but feel completely soft throughout.

Step 5 - Serve Allow to cool for 5 minutes before serving. Spoon the gorgeous caramelised pan juices over each apple. Serve warm with a drizzle of pouring custard, a spoonful of thick cream or a scoop of vanilla ice cream.

Serving Suggestions

  • Warm pouring custard - the classic and most beautiful pairing

  • A small scoop of good quality vanilla ice cream

  • A generous spoonful of thick Greek yoghurt

  • Simply on their own - the caramelised juices are enough

Storage

Refrigerator: Cool completely, cover and refrigerate for up to 2 days. Reheat in the microwave for 60–90 seconds until warmed through or in a low oven covered with foil for 15 minutes.

Freezer: Not recommended. Baked apples become watery and lose their texture when frozen.

Kim's Tips

💕 Choose the right apple - Pink Lady or Fuji apples hold their shape beautifully during baking while still becoming tender. Granny Smith apples give a lovely tart contrast to the sweet filling. Avoid very soft eating apples as they can collapse during baking.

💕 Don't cut through the bottom - the cavity needs a base to hold the filling. Go slowly when coring and stop about 1cm from the bottom.

💕 The pan juices are liquid gold - spoon every last drop over the apple when serving. They're the most delicious caramelised apple and honey syrup and completely transform the final dish.

💕 Make it more substantial - add a tablespoon of rolled oats or finely chopped soft walnuts to the filling for extra fibre and texture. Both soften beautifully during baking.

💕 Lovely for grandkids too - this is a dessert the whole family enjoys. The grandchildren will love their own individual baked apple just as much as Mum or Dad. 😊
