Basic Gravy (Freezer Batch)
A good gravy makes any meal feel like a proper Sunday roast, even on a Tuesday. I like to make a big pot of this whenever I've got pan drippings or stock on hand, then freeze it in small portions so there's always gravy ready to go with a roast, sausages, or mashed potato.
Why This Works
Gravy from scratch can feel fiddly to make from a standing start, but when it's already in the freezer, you get all the flavour with none of the last-minute fuss.
Recipe Details
Prep Time: 5 mins
Cook Time: 15 mins
Serves: Makes about 2 cups
Freezes For: Up to 3 months
What You Need
● 2 tbsp butter or pan drippings
● 2 tbsp plain flour
● 2 cups beef, chicken or vegetable stock
● 1 tsp soy sauce or Worcestershire sauce (optional, for depth)
● Salt and pepper to taste
Method
1. Melt the butter (or use drippings) in a saucepan over medium heat.
2. Whisk in the flour and cook for 1–2 minutes until lightly golden.
3. Slowly pour in the stock, whisking constantly to keep it smooth.
4. Simmer for 8–10 minutes, stirring occasionally, until thickened to your liking.
5. Stir through soy sauce or Worcestershire sauce if using, then season to taste.
6. Cool, then freeze in ice cube trays for small portions or freezer bags for larger amounts.
Kim's Tips
♥ Freezing gravy in ice cube trays is brilliant for portioning out just a spoonful or two for a single serve.
♥ Once frozen, pop the gravy cubes into a labelled freezer bag so they don't take over your whole freezer drawer.
♥ Reheat gently in a small saucepan over low heat, whisking to bring it back to a silky consistency.
