Every caregiver needs a recipe that uses pantry staples, comes together quickly and produces something genuinely delicious - and this creamy tuna pasta bake is exactly that.
Tinned tuna, pasta, a simple cream sauce and whatever soft vegetables you have on hand. It bakes in the oven until golden and bubbling and produces something that tastes far more special than its humble ingredients suggest. Most elderly parents have a deep fondness for tuna mornay style dishes and this elevated version never fails to please.
It's also one of the most economical recipes in the collection - always a good thing.

Recipe Details
Serves: 6 Prep time: 20 minutes Cook time: 30 minutes Freeze: Up to 2 months
Ingredients
400g small pasta (macaroni, small penne or small shells)
2 cans tuna in spring water (185g each), drained
1 cup frozen peas or corn
1 medium zucchini, finely diced
50g butter
50g plain flour
600ml full cream milk
1 cup grated tasty cheese plus extra for topping
1 tsp Dijon mustard
Salt and white pepper to taste
½ cup breadcrumbs for topping (optional)
Method
Step 1 - Cook the pasta Cook pasta in well salted boiling water until very soft - 2 minutes beyond packet instructions. For elderly parents very soft pasta is important. Drain and set aside.
Step 2 - Make the sauce Melt butter in a large saucepan over medium heat. Add flour and stir constantly for 1–2 minutes. Gradually add milk whisking constantly until you have a smooth thick sauce. Stir in grated cheese and Dijon mustard until melted and smooth. Season well with salt and white pepper.
Step 3 - Cook the vegetables Add the diced zucchini and frozen peas or corn to the sauce. Stir and cook for 3–4 minutes until the vegetables are just tender.
Step 4 - Combine Add the drained tuna and cooked pasta to the sauce. Fold gently to combine being careful not to break up the tuna too much. Taste and adjust seasoning.
Step 5 - Bake Preheat oven to 180°C/350°F. Transfer mixture to a greased baking dish. Top with extra grated cheese and breadcrumbs if using. Bake for 20–25 minutes until golden and bubbling.
Freezing Instructions
Freeze before baking for best results:
Assemble in individual foil containers without the breadcrumb topping
Cool completely before covering
Label with name and date
Freeze up to 2 months
To bake from frozen: Cover with foil and bake at 180°C/350°F for 45–50 minutes. Remove foil and add cheese topping for last 10 minutes.
Always ensure food is piping hot all the way through before serving.
Kim's Tips
💕 Tuna in spring water not oil - spring water tuna gives a cleaner flavour that works better in a cream sauce. Oil packed tuna can make the sauce greasy.
💕 Don't over-mix the tuna - fold it gently to keep some nice flakes rather than breaking it into tiny pieces. Better texture in the final dish.
💕 The Dijon mustard is the secret - it adds a subtle warmth and depth without making the dish taste mustardy. Don't skip it.
💕 Very soft pasta is important - unlike regular cooking where al dente is preferred, for elderly parents cook the pasta until genuinely soft. It's much easier and safer to eat.
💕 Add extra vegetables - tinned corn, diced capsicum, frozen spinach or grated carrot all work beautifully in this dish and boost the nutritional value.
