There is something so satisfying about making your own ice blocks - especially when you're four, five or six and the whole process feels like proper cooking magic. The pouring, the adding of fruit pieces, the choosing of flavours - and then the absolutely excruciating wait while they freeze - followed by the triumphant moment of pulling them out of the moulds and eating something cold and delicious that you made entirely yourself.

These easy ice blocks are perfect for warm days, perfect for little hands, and perfect for sharing with everyone in the house.

Why This Recipe Works

Ice blocks are wonderfully achievable for this age group - the pouring, stirring and adding fruit pieces are all completely within their capability, and the result is immediate and delicious.

There's also a lovely science moment built in - why does liquid become solid in the freezer? What happens to the fruit? The waiting time teaches patience in the most delicious possible way, and the pride of eating something cold and sweet that they made themselves is genuinely enormous at this age.

Recipe Details

Serves: Makes 6–8 ice blocks depending on mould size
Prep Time: 10 minutes
Freeze Time: 4–6 hours or overnight
Freezer Friendly: Yes - they ARE the freezer food!

Ingredients

Choose one of these simple combinations - or let children mix their own!

Option 1 - Tropical Sunshine:

  • 400ml coconut milk

  • 200ml mango juice or puree

  • 1 tbsp honey

Option 2 - Berry Blast:

  • 400ml apple juice

  • 1 cup mixed berries - fresh or frozen

  • 1 tbsp honey or maple syrup

Option 3 - Watermelon Refresher:

  • 3 cups watermelon flesh, blended

  • Juice of 1 lime

  • Fresh mint leaves (optional)

Option 4 - Yoghurt & Honey:

  • 400g Greek yoghurt

  • 3 tbsp honey

  • 1 tsp vanilla extract

  • Fresh fruit pieces to add to moulds

Method

  1. Choose your flavour combination together.

  2. Mix liquid ingredients in a jug - children can pour and stir.

  3. Drop any fruit pieces into the ice block moulds first.

  4. Pour the liquid mixture over the fruit, filling moulds to just below the top.

  5. Insert sticks - if using moulds with lids, attach them now.

  6. Place carefully in the freezer.

  7. Freeze for at least 4–6 hours - overnight is best and much less tempting!

  8. To unmould, run briefly under warm water and pull gently.

  9. Eat immediately or wrap in baking paper and return to freezer.

Freezing Instructions

Wrap individual ice blocks in baking paper and store in a zip-lock bag for up to 6 weeks. Run briefly under warm water to unmould if needed.

Kim's Tips 💕

  • Let children choose their own flavour - ownership of the decision makes the waiting so much easier!

  • Layered ice blocks look beautiful - pour one colour, freeze for an hour, then add the second colour.

  • Dropping fruit pieces into the mould before pouring gives beautiful results - and children love arranging the fruit.

  • A simple jug with a pour spout makes the pouring step much neater for little hands.

  • These are perfect for a hot Australian summer day - make a batch in the morning and eat them after lunch!
