Once children reach the age of seven or eight, the simple fruit juice ice block they loved as a toddler suddenly feels a bit ordinary - and that's the perfect moment to introduce something far more interesting.
Gourmet homemade ice blocks are a genuine food science and culinary design project - choosing sophisticated flavour combinations, creating beautiful layered effects, experimenting with textures and inclusions, and producing something that looks and tastes like something from a boutique ice cream shop. This is cooking that challenges, surprises and deeply satisfies children aged 7β10.

Gourmet ice block making introduces children to the concept of flavour pairing - why do some flavours work together and others don't?
It also develops patience and planning - layered ice blocks require freezing between each layer, which means thinking ahead and working in stages. The design element is genuinely exciting for this age group - sketching the layers, choosing colours and flavours, considering how it will look when bitten - this is creative thinking applied to food in a really engaging way.

Ingredients
Choose a combination or design your own - these are our favourites:
Option 1 - Mango Coconut Cheesecake:
Layer 1: 200ml coconut cream + 1 tbsp honey
Layer 2: 1 cup mango puree + juice of half a lime
Layer 3: 150g cream cheese + 2 tbsp icing sugar + 3 tbsp milk, blended smooth
Option 2 - Strawberry Basil Lemonade:
Layer 1: 1 cup strawberries blended with 2 tbsp sugar
Layer 2: 250ml lemonade
Layer 3: Fresh basil leaves frozen into the lemonade layer
Option 3 - Chocolate Peanut Butter Banana:
Layer 1: 2 ripe bananas blended with 200ml milk
Layer 2: 3 tbsp peanut butter + 200ml coconut milk + 1 tbsp honey, blended
Layer 3: 200ml chocolate milk or cocoa blended with milk and honey
Option 4 - Watermelon Mint Feta (the adventurous one!)
Layer 1: 2 cups watermelon blended with mint leaves
Layer 2: 100g feta blended with 3 tbsp honey and 100ml cream
Garnish: small watermelon chunks frozen inside
Method
Sketch the design first - which layer goes at the bottom, middle and top? What colours will they be?
Prepare each layer separately in small jugs or bowls.
Pour the first layer into moulds - fill to one third.
Freeze for 1β1.5 hours until just firm but not completely solid - this helps layers bond.
Pour the second layer carefully over the first.
Freeze again for 1β1.5 hours.
Add the third layer and insert sticks if not using a lidded mould.
Freeze overnight until completely solid.
Unmould by running briefly under warm water and pulling gently from the stick.
Freezing Instructions
Wrap individually in baking paper and store in a labelled zip-lock bag for up to 6 weeks. Label with the flavour combination - these make wonderful gifts!

Sketching the design on paper first is genuinely useful - it helps children think through the order of layers and the colour combinations.
The partially frozen layer trick is the secret to clean, defined layers - don't rush it.
Encourage children to design their own flavour combination - some will be extraordinary, some will be surprising, all will be theirs.
These make the most wonderful summer gifts - a box of homemade gourmet ice blocks for a friend or grandparent is incredibly thoughtful.
The Watermelon Mint Feta combination sounds unusual but is genuinely, surprisingly delicious - a perfect adventurous flavour for children who love trying new things.
