This lentil and vegetable soup is one of the most nourishing things you can put in front of an elderly parent - and one of the most economical to make.
It's thick, hearty and deeply satisfying in the way that only a proper soup made with real ingredients can be. The red lentils dissolve into the broth creating a beautiful thick base while the vegetables become completely tender. The whole thing is blended to a velvety smooth consistency that is effortless to eat and incredibly gentle on elderly digestive systems.
It's also completely plant based - no meat required - which makes it a wonderful option for elderly parents who have reduced their meat intake or who simply need a lighter meal on some days.

Recipe Details

Ingredients
1½ cups red lentils, rinsed well
2 medium carrots, peeled and roughly chopped
2 medium potatoes, peeled and roughly chopped
2 stalks celery, roughly chopped
1 large onion, diced
3 cloves garlic, minced
1 can diced tomatoes (400g)
1.5 litres good quality vegetable stock
1 tsp ground cumin
1 tsp ground coriander
½ tsp turmeric
¼ tsp smoked paprika
2 tbsp olive oil
Juice of half a lemon
Salt and pepper to taste
Fresh parsley to serve
Method
Step 1 - Soften the aromatics Heat olive oil in a large pot over medium heat. Add the diced onion and cook gently for 5–6 minutes until soft and translucent. Add the garlic and all the spices and cook for 1–2 minutes stirring constantly until fragrant.
Step 2 - Add vegetables and lentils Add the carrots, potatoes and celery to the pot. Stir to coat in the spiced oil. Add the rinsed lentils and stir again.
Step 3 - Add tomatoes and stock Pour in the diced tomatoes and vegetable stock. Stir everything together well. Bring to a boil then reduce to a steady simmer.
Step 4 - Simmer until tender Cook uncovered for 25–30 minutes stirring occasionally until the lentils have completely dissolved and the vegetables are very soft.
Step 5 - Blend until smooth Remove from heat and use a stick blender to blend until completely smooth. Take your time — the soup should be silky with no lumps at all. Add a squeeze of lemon juice and stir through.
Step 6- Season and serve Taste and adjust seasoning generously with salt and pepper. The lemon juice and seasoning really bring all the flavours together. Serve with fresh parsley scattered over the top.
Freezing Instructions
Cool completely before freezing
Portion into individual containers
Label with name and date
Freeze up to 3 months
To reheat: Thaw overnight in fridge. Reheat gently on stovetop adding a splash of stock or water if too thick. Or microwave on medium power stirring every 90 seconds until piping hot.
Always ensure food is piping hot all the way through before serving.
Kim's Tips
💕 Rinse the lentils well - rinse under cold running water until the water runs clear. This removes any dustiness and improves the final flavour significantly.
💕 The spices are gentle - cumin, coriander and turmeric are all very well tolerated and actually support elderly digestive health. The amounts used here are mild and warming rather than spicy.
💕 Add a squeeze of lemon at the end - this is the step that transforms good soup into great soup. The lemon brightens every flavour and makes the whole thing taste fresh and vibrant.
💕 Serve with soft bread - a small piece of soft bread or a dinner roll alongside turns this soup into a really satisfying and complete meal.
