No-Bake Bites: One Master Recipe, Endless Flavours

If there's one recipe I'd teach every grandparent and parent, it's this one. No oven, no fuss, a bowl, a spoon and a pair of small hands. Once you know the formula, you can make a different bite every week, use whatever's in the pantry and keep a tub in the freezer for those "I'm hungry" moments.

Why No-Bake Bites Are a Holiday Lifesaver

• No oven. Perfect for hot Australian summer days, and safe for children to help with.

• Fifteen minutes of work. Most of the time is chilling, not making.

• Freezer-friendly. A single batch lasts for weeks.

• Endless variety. Change two ingredients and you have a brand new flavour.

• Fits the lunchbox. They travel well and double as a mini ice-pack.

• Easy to adapt. Nut-free, dairy-free and gluten-free versions are all simple.

The Formula

Every bite follows the same pattern: oats + a sticky binder + a sweetener + flavour + a mix-in. Learn it once and you'll never need a recipe again.

The Master Recipe

Makes about 18 bites. Takes 15 minutes, plus 30 minutes chilling.

Ingredients

• 1 cup rolled oats (not instant)

• 1/2 cup nut butter, such as peanut or almond (or sunflower seed butter or tahini for a nut-free version)

• 1/3 cup honey or maple syrup (use maple syrup for children under one)

• 1/2 cup add-in, such as shredded coconut, ground flaxseed or oat bran

• 1/3 cup mix-in, such as mini chocolate chips, chopped dried fruit or sprinkles

• 1 tsp vanilla extract

• Pinch of salt

• 1 to 2 tbsp milk, only if needed

Method

1. Mix the dry ingredients. Stir the oats, add-in, mix-in and salt together in a large bowl.

2. Warm the binder. In a small bowl, microwave the nut butter and honey for 15 to 20 seconds, so it's runny and easy to stir. Add the vanilla.

3. Combine. Pour the wet mixture over the dry ingredients and stir well until everything is coated.

4. Check the texture. The mixture should hold together when you squeeze a little in your hand. If it's too crumbly, add a splash of milk or a spoonful more nut butter. If it's too sticky, add a tablespoon of oats.

5. Chill. Cover the bowl and refrigerate for 30 minutes. This makes the mixture much easier to roll.

6. Roll. Using a level tablespoon at a time, roll into balls with slightly damp hands.

7. Set. Place on a tray lined with baking paper and chill for another 30 minutes, or freeze for 15.

8. Store. Move to an airtight container.

Jobs for Little Helpers

• Ages 2 to 4: pour, stir, squish and sprinkle the toppings.

• Ages 5 to 7: measure with cups and spoons, and roll the balls.

• Ages 8 and up: read the recipe, warm the binder (with supervision), and test the texture.

Twelve Flavours to Try

Use the master recipe and change the add-in and mix-in:

• Choc Coconut: shredded coconut as the add-in, mini chocolate chips as the mix-in, and 1 tbsp cocoa stirred into the binder.

• Apple Cinnamon: ground flaxseed as the add-in, finely chopped dried apple as the mix-in, and 1 tsp cinnamon.

• Christmas Cake Bites: oat bran as the add-in, chopped mixed dried fruit and a few chopped glacé cherries as the mix-in, plus 1 tsp mixed spice and the zest of half an orange.

• Peanut Butter and Jam: peanut butter as the binder, a spoonful of chia jam stirred in with the wet ingredients, and chopped roasted peanuts as the mix-in.

• Gingerbread: 1 tsp ground ginger, 1/2 tsp cinnamon and 1 tbsp molasses or extra maple syrup, with sultanas as the mix-in.

• Tropical: shredded coconut as the add-in, chopped dried mango and pineapple as the mix-in, and a squeeze of lime juice.

• Choc Orange: cocoa in the binder, the zest of one orange, and mini chocolate chips.

• Banana Bread: finely chopped dried banana and walnuts as the mix-in, with 1 tsp cinnamon.

• Cookie Dough: extra vanilla, a pinch more salt, and mini chocolate chips.

• Mint Choc: 1 tbsp cocoa, 1/4 tsp peppermint extract (it's strong, so start small), and mini chocolate chips.

• Anzac: shredded coconut as the add-in, golden syrup instead of honey, and a pinch of ground ginger.

• Berry Coconut: shredded coconut as the add-in and crushed freeze-dried raspberries or strawberries as the mix-in.

Swaps, Storage and Troubleshooting

Swaps

• Nut-free: use sunflower seed butter or tahini instead of nut butter, and check labels on any packaged add-ins. This is helpful for lunchboxes at schools with nut rules.

• Gluten-free: use certified gluten-free oats.

• Dairy-free: the master recipe is naturally dairy-free if you use dairy-free chocolate chips and a plant milk.

• Less sweet: reduce the honey to 1/4 cup and add a mashed ripe banana.

• Extra protein: add 2 tbsp protein powder or a spoonful of chia seeds.

• For toddlers: leave out whole nuts, use finely chopped fruit, and roll the bites a little smaller.

Storage

• Fridge: in an airtight container for up to a week.

• Freezer: in a sealed container or bag for up to two months. Eat straight from the freezer, or let them sit for five minutes.

• Lunchbox: they're fine out of the fridge for a few hours, and they double as a mini ice-pack.

Troubleshooting

Problem Fix

Mixture is crumbly and won't hold Add 1 tbsp nut butter or a splash of milk, then chill

Mixture is too sticky to roll Add 1 to 2 tbsp oats, chill for 30 minutes, and use damp hands

Bites are too sweet Next time, reduce the honey and add a little salt

Bites go soft out of the fridge Keep them chilled until just before eating

Chocolate chips melt into the mixture Chill the mixture before adding them, or use mini chips
