A no bake cheesecake is one of those magical recipes that delivers maximum wow for minimum effort — which makes it absolutely perfect for tweens. No oven, no complicated techniques, just simple ingredients coming together into something that looks and tastes genuinely spectacular.

This is the recipe that will have your tween texting their friends a photo before it even sets. And honestly? It deserves the attention.

Time: 30 minutes + 4 hours setting time

Serves: 8–10

What You Need

  • 250g plain biscuits (digestives or similar)

  • 100g butter, melted

  • 500g cream cheese, softened

  • ¾ cup icing sugar

  • 1 tsp vanilla extract

  • 300ml thickened cream

  • Toppings: fresh berries, passionfruit, chocolate shavings or caramel sauce

Steps

  1. Crush biscuits in a zip lock bag with a rolling pin until fine crumbs form.

  2. Mix crumbs with melted butter and press firmly into the base of a lined springform tin. Refrigerate while preparing the filling.

  3. Beat cream cheese, icing sugar and vanilla together until smooth and creamy.

  4. In a separate bowl, whip cream to soft peaks. Fold gently through the cream cheese mixture.

  5. Spoon filling over the biscuit base and smooth the top.

  6. Refrigerate for at least 4 hours or overnight until set.

  7. Top with chosen toppings just before serving and slice to serve.
