Seeded Lavosh Crackers

Crisp Shards for the Cheese Board

Lavosh is a thin, crisp flatbread, and baked in big sheets and broken into rustic shards it looks far fancier than it is. There's no yeast, no waiting for a rise and no special equipment. You mix a simple dough, roll it paper thin, scatter on seeds and rosemary, and the oven does the rest. The shards are wonderful on a cheese board and they make a lovely gift for anyone who entertains over summer or winter.

The only real skill is rolling the dough thin enough. Thin means crisp, and thick means chewy, so I'll show you the tricks that make it easy. Rolling it straight onto baking paper is my favourite one. Then you can slide the whole sheet onto the tray without any tearing.

Packaging and Gifting

Breakable gifts need a gentle approach. Lavosh shards are fragile and the sharp edges poke through thin bags, so pack them with care.

• Tall cellophane bags: these work well. Stack the shards in the bag standing up, like a bunch of flowers, so they are not squashed. Close with a twist tie and finish with a ribbon. Carry the gift flat in a box so it doesn't get squashed in a handbag.

• Tin or box: line it with baking paper and lay the shards flat in layers, with a sheet of baking paper between each layer. Fill any gaps with scrunched paper so they can't slide about.

• Bag inside a box: for posting or a long trip, put the sealed bag into a small rigid box and pack the gaps with tissue paper.

Pack only when the lavosh is completely cold. Warm crackers sweat in the bag and go soft.

To decorate, tie a sprig of fresh rosemary, a bay leaf or a cinnamon stick into the ribbon, and add a kraft tag.

Label wording:

Seeded Lavosh Crackers. Made on [date]. Best within 2 weeks. Keep in an airtight container in a cool, dry place. Contains wheat (gluten) and sesame.

Gift tag message: Crack me up. Break into pieces and serve with cheese and chutney. Merry Christmas from [name].

Allergen note: these crackers contain wheat (gluten) and sesame seeds. Other seeds are used, and you can leave the sesame out for a sesame-free batch, but say clearly on the label what is in the bag and don't give them to anyone with an allergy unless you are certain they are safe.

Lovely things to pair them with:

• A jar of chutney or relish, such as a pear and ginger chutney

• A wedge of good cheese, like a creamy brie or a sharp cheddar

• A small cheese knife or a wooden serving board

Making It With the Grandkids

• Ages 3 and up: measure and stir the dry ingredients, sprinkle on the seeds, and decorate the labels.

• Ages 5 and up: knead the dough, brush on the oil and press the dough with a fork to prick it.

• Ages 6 and up: roll the dough, with plenty of flour and plenty of patience. Then, once cool, break the sheets into shards.

• Adults only: the hot oven, the hot trays and chopping the pepitas.

Check for allergies first, including sesame. If any child has one, leave the sesame seeds out and use more of the other seeds.
