There are very few desserts as universally loved by elderly parents as a proper rice pudding.
It's creamy, gentle, naturally sweet and so deeply comforting that it feels less like dessert and more like a warm hug in a bowl. And making it in the slow cooker means you barely have to think about it — just stir everything together, set it and walk away. It does all the work itself.
The slow cooker method gives this rice pudding a depth of creaminess that stovetop versions simply can't match. The rice slowly absorbs the milk over several hours, swelling into soft tender grains surrounded by the most gorgeous thick creamy sauce.
This is one of those recipes that will have Mum asking you to make it every single week. Consider yourself warned. 😊

Recipe Details

Ingredients
1 cup short grain white rice (arborio or pudding rice works beautifully)
1 litre full cream milk
400ml sweetened condensed milk
1 tsp pure vanilla extract
½ tsp ground cinnamon plus extra to serve
Pinch of salt
30g butter, cut into small pieces
Optional toppings to serve:
Stewed fruit
A drizzle of honey
Fresh or tinned peaches
A sprinkle of cinnamon or nutmeg
A dollop of thick cream
Method
Step 1 - Prepare the slow cooker Lightly grease the inside of your slow cooker with butter or cooking spray. This prevents the rice from sticking to the sides during the long cook.
Step 2 - Add all ingredients Add the rice, full cream milk, condensed milk, vanilla extract, cinnamon and pinch of salt to the slow cooker. Scatter the small pieces of butter over the top. Give everything a good stir to combine.
Step 3 - Cook low and slow Place the lid on and cook on LOW for 3–4 hours. Stir every hour if possible — this prevents the rice from sticking to the bottom and ensures even cooking. If you can't stir it that's fine too — it will still be delicious, just give it a good stir before serving.
Step 4 - Check the consistency At the 3 hour mark check the pudding. It should be thick and creamy with soft, tender rice grains. If it looks too thick add a splash of warm milk and stir through. If it looks too thin continue cooking for a further 30 minutes with the lid slightly ajar.
Step 5 - Serve Ladle into bowls and serve warm with your choice of toppings. A sprinkle of cinnamon and a drizzle of honey is the simplest and most beautiful combination.
Serving Suggestions
Rice pudding is wonderful on its own but also pairs beautifully with:
Warm stewed pears or apples
Tinned peaches or apricots in juice
A spoonful of good quality jam stirred through
Fresh berries when in season
A drizzle of maple syrup
Storage
Refrigerator: Allow to cool completely then store covered in the fridge for up to 3 days. The pudding will thicken considerably when cold — stir through a splash of warm milk when reheating to restore the creamy consistency.
Reheating: Reheat gently in a saucepan over low heat stirring constantly, or microwave in 60 second intervals stirring between each, adding a little milk as needed.
Freezer: Not recommended. Rice pudding becomes grainy and separates when frozen.
Kim's Tips
💕 Short grain rice is essential - short grain rice (arborio or pudding rice) releases starch as it cooks which creates that gorgeous thick creamy sauce. Long grain rice will not give you the same result.
💕 Condensed milk is the secret - it adds a beautiful sweetness and creaminess that you simply cannot replicate with regular sugar. Don't be tempted to substitute it.
💕 Stir when you can - the more you stir during cooking the creamier the result. Even just once or twice during the cook makes a noticeable difference.
💕 It thickens as it cools - don't panic if it looks slightly too runny when you first open the slow cooker. It will thicken considerably as it cools and even more overnight in the fridge.
💕 Double the batch - this recipe doubles easily in a large slow cooker. Make a big batch and portion into individual containers for multiple servings. Your Mum can have a proper homemade dessert every night of the week with almost no extra effort from you.
