Avocado on toast has become one of the most talked about foods of the last decade - and while the trend may have started with cafรฉs and millennials, the truth is that avocado on toast is absolutely perfect for elderly parents too.

Avocado has a naturally smooth creamy texture that spreads effortlessly on soft toast and requires almost no chewing at all. It's one of the most nutrient-dense foods available - packed with healthy fats, potassium, folate and vitamins that are particularly beneficial for elderly health. And mashed with just a little lemon juice and a pinch of seasoning it becomes something that is genuinely delicious.

This is the snack I make for Mum when I want something quick, nourishing and satisfying that I know she will enjoy.

Recipe Details

Ingredients

  • 1 ripe avocado

  • 1โ€“2 slices soft white or wholemeal bread

  • Juice of half a lemon or lime

  • Salt and pepper to taste

  • Small knob of butter for the toast

  • Optional toppings: pinch of chilli flakes, everything bagel seasoning, a drizzle of olive oil, sliced cherry tomato, a poached or soft boiled egg on top

Method

Step 1 - Check your avocado is ripe A ripe avocado should yield gently when pressed. If it feels hard it is not yet ripe โ€” leave at room temperature for 1โ€“2 days. An overripe avocado will have brown mushy flesh and should be discarded.

Step 2 - Toast the bread Toast the bread to a medium golden colour. Butter lightly while still warm.

Step 3 - Prepare the avocado Cut the avocado in half lengthways and remove the stone. Scoop the flesh into a small bowl using a large spoon.

Step 4 - Mash until smooth Add the lemon juice and a good pinch of salt and pepper. Mash thoroughly with a fork until completely smooth - for elderly parents a very smooth mash with no lumps is important. If you prefer an even smoother result use the back of a spoon to press against the side of the bowl.

Step 5 - Spread and serve Spread the mashed avocado generously over the buttered toast. Add any optional toppings and serve immediately.

Variations

Classic - just avocado, lemon, salt and pepper. Perfect as it is.

With egg - top with a soft poached egg or soft scrambled eggs for a complete protein-rich meal.

With tomato - add very finely diced soft tomato over the avocado. Adds lovely colour and flavour.

Extra creamy - mix a tablespoon of cream cheese into the mashed avocado before spreading. Even more creamy and luxurious.

Storage

Avocado oxidises quickly - mashed avocado turns brown within an hour of being exposed to air. Always make fresh and serve immediately.

To store leftover avocado: Press plastic wrap directly onto the surface of the cut avocado (not just over the bowl) and refrigerate. The lemon juice helps slow oxidation. Use within 24 hours.

Kim's Tips

๐Ÿ’• Lemon juice prevents browning - add it immediately after mashing. It also adds a lovely brightness to the flavour.

๐Ÿ’• Season generously - avocado needs proper seasoning to come alive. Don't be shy with the salt - a well seasoned avocado spread is completely different to an under-seasoned one.

๐Ÿ’• Soft bread is essential โ€” soft white or wholemeal sandwich bread toasts to a texture that is easy for elderly parents to manage. Avoid sourdough or crusty artisan bread.

๐Ÿ’• A ripe avocado makes all the difference - an underripe avocado is firm, bitter and difficult to mash. Buy avocados a few days before you need them and allow to ripen at room temperature.

๐Ÿ’• This works as a light meal too - two slices of avocado toast with an egg on top is a nutritionally complete and satisfying light lunch that covers protein, healthy fats and complex carbohydrates.
