The simplest snack that feels like a treat β ready in 5 minutes
EASY MEALS FOR ELDERLY PARENTS

Sometimes the most nourishing things are also the most simple.
Warm soft toast topped with sliced banana and a drizzle of honey takes five minutes to make and produces something that genuinely feels like a treat. The banana softens against the warm toast, the honey adds a beautiful floral sweetness and the whole thing is soft, easy to eat and naturally energising.
For elderly parents who need a quick nutritious snack between meals or a light breakfast on days when appetite is low, this is one of the most reliable things in my repertoire. It's gentle enough for sensitive stomachs, sweet enough to be appealing when nothing else sounds good and nourishing enough to actually make a difference.
Why This Recipe Works
Completely soft - soft bread toasted to golden and banana that softens against the warmth
Naturally energising - banana provides immediate and sustained energy through natural sugars and potassium
High in potassium - supports healthy heart function and blood pressure
Easy to prepare independently - simple enough for elderly parents to make themselves if they are able
Gentle on digestion - both banana and honey are very well tolerated
Appeals to reduced appetite - the sweetness and warmth make this appealing even on low appetite days
Ready in 5 minutes - one of the fastest snacks in the collection
Recipe Details
Serves: 1 Prep time: 2 minutes Cook time: 3 minutes Freeze: Not suitable
Ingredients
1β2 slices soft white or wholemeal bread
1 ripe banana
1β2 tsp good quality honey
Small knob of butter
Optional: pinch of ground cinnamon
Optional: 1 tbsp natural peanut butter or almond butter
Method
Step 1 - Toast the bread Toast the bread to a medium golden colour - not too dark as very crispy toast can be difficult to manage. For elderly parents a slightly lighter toast that is golden but still has some give is perfect.
Step 2 - Butter the toast Butter the warm toast generously while it is still hot so the butter melts in completely.
Step 3 - Add the banana Peel the banana and slice into rounds approximately 5mm thick. Arrange the slices over the buttered toast overlapping slightly.
Step 4 - Drizzle with honey Drizzle honey generously over the banana. The warmth of the toast will cause the honey to soften and flow over the banana beautifully.
Step 5 - Optional additions Dust with a tiny pinch of ground cinnamon if desired. If using nut butter spread it on the toast before adding the banana for extra protein and healthy fats.
Step 6 - Serve immediately Serve straight away while the toast is warm and the banana has softened slightly against the heat.
Variations
Peanut butter banana honey toast - spread a thin layer of smooth natural peanut butter on the buttered toast before adding the banana and honey. The combination of peanut butter and banana is a classic for good reason and adds substantial protein.
Cinnamon banana toast - add a generous pinch of ground cinnamon along with the honey. Warming and aromatic.
Mashed banana toast - for elderly parents who find sliced banana difficult to manage, mash the banana with a fork until smooth and spread over the toast like a topping. Even softer and easier to eat.
Storage
This snack is best made fresh and eaten immediately. Bananas brown quickly once sliced and the toast loses its warmth and texture if left to sit.
Kim's Tips
π Ripe bananas are sweeter and softer - use bananas that are fully ripe with some brown spots on the skin. They're sweeter, softer and more easily digested than firm yellow bananas.
π Good quality honey makes a difference - in a recipe this simple every ingredient matters. A good quality local honey has far more flavour than a generic supermarket honey.
π Soft bread is essential - soft white or wholemeal sandwich bread toasts to a texture that is golden and slightly crispy on the outside but still soft and easy to manage. Avoid sourdough or crusty artisan bread which can be too hard.
π This works as a light breakfast too - two slices with a full banana is a perfectly nourishing light breakfast that provides sustained energy through the morning.
π The mashed version is even easier - if your parent/toddler finds it difficult to pick up sliced banana, mash it with a fork and spread it across the toast like butter. Just as delicious and much easier to manage.
