Sometimes the most nourishing things are also the most simple.

Warm soft toast topped with sliced banana and a drizzle of honey takes five minutes to make and produces something that genuinely feels like a treat. The banana softens against the warm toast, the honey adds a beautiful floral sweetness and the whole thing is soft, easy to eat and naturally energising.

For elderly parents who need a quick nutritious snack between meals or a light breakfast on days when appetite is low, this is one of the most reliable things in my repertoire. It's gentle enough for sensitive stomachs, sweet enough to be appealing when nothing else sounds good and nourishing enough to actually make a difference.

Ingredients

  • 1–2 slices soft white or wholemeal bread

  • 1 ripe banana

  • 1–2 tsp good quality honey

  • Small knob of butter

  • Optional: pinch of ground cinnamon

  • Optional: 1 tbsp natural peanut butter or almond butter

Method

Step 1 - Toast the bread Toast the bread to a medium golden colour - not too dark as very crispy toast can be difficult to manage. For elderly parents a slightly lighter toast that is golden but still has some give is perfect.

Step 2 - Butter the toast Butter the warm toast generously while it is still hot so the butter melts in completely.

Step 3 - Add the banana Peel the banana and slice into rounds approximately 5mm thick. Arrange the slices over the buttered toast overlapping slightly.

Step 4 - Drizzle with honey Drizzle honey generously over the banana. The warmth of the toast will cause the honey to soften and flow over the banana beautifully.

Step 5 - Optional additions Dust with a tiny pinch of ground cinnamon if desired. If using nut butter spread it on the toast before adding the banana for extra protein and healthy fats.

Step 6 - Serve immediately Serve straight away while the toast is warm and the banana has softened slightly against the heat.

Variations

Peanut butter banana honey toast - spread a thin layer of smooth natural peanut butter on the buttered toast before adding the banana and honey. The combination of peanut butter and banana is a classic for good reason and adds substantial protein.

Cinnamon banana toast - add a generous pinch of ground cinnamon along with the honey. Warming and aromatic.

Mashed banana toast - for elderly parents who find sliced banana difficult to manage, mash the banana with a fork until smooth and spread over the toast like a topping. Even softer and easier to eat.

Storage

This snack is best made fresh and eaten immediately. Bananas brown quickly once sliced and the toast loses its warmth and texture if left to sit.
