This is one of those recipes I make in a big batch and thank myself for later. A smooth white sauce is the base for so many family favourites - lasagne, fish pie, mac and cheese, creamy vegetables - and having it ready in the freezer means dinner comes together in half the time.
Why This Works
Having a freezer stash of this basic sauce means you're never stuck without a creamy base for a quick, comforting meal, which is a lifesaver on busy days or when grandchildren turn up unannounced (in the best way!).
Recipe Details
Prep Time: 5 mins
Cook Time: 10 mins
Serves: Makes 2 cups
Freezes For: Up to 3 months
What You Need
● 50g butter
● 50g plain flour
● 600ml milk, warmed
● Pinch of salt
● Pinch of white pepper
● Pinch of nutmeg (optional)
Method
1. Melt the butter in a saucepan over medium heat.
2. Stir in the flour and cook for 1–2 minutes, stirring constantly, to form a smooth paste (this is your roux).
3. Gradually whisk in the warm milk, a little at a time, whisking well after each addition to avoid lumps.
4. Keep whisking over medium heat until the sauce thickens and comes to a gentle simmer, about 5 minutes.
5. Season with salt, pepper and a pinch of nutmeg if using.
6. Cool completely, then freeze in flat freezer bags or small containers in meal-sized portions.
Kim's Tips
♥ Lay the freezer bags flat on a tray until frozen - they'll stack neatly afterwards and take up so much less space.
♥ Thaw overnight in the fridge, then reheat gently on the stove, whisking in a splash of milk if it's thickened too much.
♥ Double or triple the batch - it takes barely any extra time and you'll be so glad it's there on a busy night.
