Christmas Rocky Road
Chocolate, Marshmallow and a Little Christmas Sparkle
Rocky road is the sweet treat that never lasts long in my house. Chunky chocolate, squishy marshmallows, crunchy nuts, jewel-bright cherries and toasty coconut, all held together with nothing more than melted chocolate. There's no oven, no thermometer and no tricky technique, which makes it one of the friendliest gifts you can make with children or grandchildren beside you.
The cherries give it a festive look, and a stack of squares in a pretty tin or box looks like you've been fussing for hours. You haven't. It takes 15 minutes, and then the fridge does the rest.

Packaging and Gifting
Rocky road is chunky, so it packs best in a box or tin rather than a jar.
• Container: a small cardboard gift box or a lidded tin, about 15 cm (6 inches) square, lined with baking paper. Six to eight squares fit nicely in a small box, so one batch makes three or four gifts.
• Layer it. Put a square of baking paper between layers so the pieces don't stick together.
• Decorate. A red or tartan ribbon, a sprig of fresh rosemary or a little paper tag on the lid. Clear cellophane bags tied with ribbon work for individual serves.
• Keep it cool. Hand it over in a cool bag in summer, and ask the recipient to pop it in the fridge.
Label wording:
Christmas Rocky Road. Made on [date]. Contains peanuts or tree nuts, milk, soy, coconut and gelatine (from the marshmallows). Keep cool, in the fridge.
Gift tag message:
A little bit rocky, a lot of love. Merry Christmas!
Lovely things to pair it with:
• A mug and a jar of Hot Chocolate Mix in a Jar
• A small bag of coffee beans or good tea bags
• A Christmas tea towel or a set of festive napkins
Allergen note: contains nuts (peanuts or tree nuts, depending on what you choose), milk and soy from the chocolate, coconut, and gelatine in the marshmallows, so it isn't vegetarian. May contain traces of gluten, depending on the marshmallows and chocolate. Always label your gifts and tell the recipient what's in it.
Making It With the Kids/Grandkids
This is a brilliant one for little helpers, because there's very little that needs an adult except the knife and the microwave.
• Ages 3 and up: tip the marshmallows, nuts and cherries into bowls, stir the finished mixture (once it's cool enough), and decorate the labels and boxes.
• Ages 5 and up: line the tin with baking paper, press the mixture down, and stir the melting chocolate once the bowl is out of the microwave and has cooled a little.
• Ages 7 and up: halve the cherries with a small, blunt kitchen knife or scissors, with an adult watching closely.
• Adults only: chopping the chocolate, the microwave (the bowl gets hot), toasting the coconut and cutting the slab.
• Allergies first: check for nut allergies before children handle the nuts, and wash hands before and after.
