Easy Condensed Milk Fudge

Creamy, Rich and No Thermometer Needed

Proper fudge scares a lot of people. There's hot sugar, a thermometer, and a lot of beating at just the right moment. This fudge skips all of that. Two ingredients do the heavy lifting: a tin of sweetened condensed milk and a good bar of chocolate, melted together gently on the stove. Add vanilla and a pinch of salt, pour it into a tin, and the fridge does the rest.

The result is smooth, rich and creamy, and it cuts into neat little squares that look lovely in a box. It's also a very forgiving recipe, so it's one I'm happy to hand to a nervous cook or a keen grandchild. Because it's so sweet and rich, small squares are all you need.

Packaging and Gifting

Fudge is rich, so small gifts go a long way. Twelve pieces is a generous gift, so one batch makes about three boxes.

• Container: a small gift box, lidded tin or clear cellophane bag, lined with baking paper. A rigid box protects the squares best.

• Layer it. Put a square of baking paper between layers so the pieces don't stick together. Individual paper cases (like cupcake liners) make pieces look extra smart.

• Decorate. A ribbon, a sprig of rosemary or holly (not to be eaten), or a hand-written tag.

• Keep it cool. In hot weather pack it in a cool bag and ask the recipient to refrigerate it.

Label wording:

Chocolate Fudge. Made on [date]. Contains milk, soy (from the chocolate) and [nuts, if used]. Keep refrigerated. Use within 2 weeks of the date made.

Gift tag message:

A little bit of sweetness for you. Merry Christmas!

Lovely things to pair it with:

• A bag of good coffee or a box of tea

• A pretty mug and a jar of Hot Chocolate Mix in a Jar

• A small bottle of cream or a jar of caramel sauce, for a dessert plate

Allergen note: contains milk (condensed milk and chocolate) and soy (in most chocolate). Contains nuts if you add them, and may contain traces of nuts or gluten depending on the chocolate. Always label your gifts.

Making It With the Kids/Grandkids

Fudge is a lovely one for little helpers, as long as the hot parts stay with the adult.

• Ages 3 and up: decorate the labels and boxes, and sprinkle sprinkles over the top (the adult pours).

• Ages 4 and up: line the tin with baking paper, stir in the vanilla and nuts off the heat once the saucepan has cooled for a couple of minutes, and add the sprinkles.

• Ages 6 and up: stir the mixture in the tin with a spoon to smooth it, and place paper cases in the boxes.

• Ages 8 and up: cut the cold fudge into squares with a blunt knife and adult supervision.

• Adults only: the hob or microwave, the hot saucepan and the sharp knife. Keep children back from the stove while the mixture is heating.

• Check for allergies before adding nuts, and wash hands first.
